Buttermilk pancakes with poached pears and chocolate ganache

Ingredients

POACHED PEARS
  • 4 Corella pears
  • 750ml water
  • 100g castor sugar 
  • 250ml orange juice 
CHOCOLATE GANACHE SAUCE
  • 250ml cream
  • 100g 70% valhrona chocolate*
BUTTERMILK PANCAKES
  • 250g self raising flour
  • 1 tsp baking powder
  • 75g castor sugar 
  • 2 whole eggs 
  • 200ml buttermilk

Method

Poached pears: Peel pears. Put water, sugar + orange juice into a small pot w the pears. Bring to boil then simmer slowly for approximately 45 mins or until tender. Chocolate ganache sauce: Bring cream to boil then remove from heat. Wait 5 minutes then whisk in chocolate until melted. Buttermilk pancakes: Whisk milk and eggs together. Combine flour, sugar and baking powder together in a bowl. Whisk eggs and milk mixture until smooth. Refrigerate and leave to rest for one hour before cooking. Enjoy for breakfast or even a special dessert!
