Borgo's mortadella is created with an old sausage recipe invented by some Emilian Monks. It is made by pounding pork and beef in a mortar, stuffing it into an animal bladder, then roasting it in the oven, where they used to bake their bread. Borgo's has vastly improved on the method of manufacture without compromising its authenticity.
