Fig & Fennel paste is the perfect accompaniment with washed rind cheese, hard sheep’s milk cheese, goat’s cheese and blue cheese.

For any paste left over from the cheese plate, try adding it to a ravioli filling of fresh ricotta, or melt with a little Verjuice and brush onto the scored fat of a leg of ham before baking.
